1 ear of Honey Sweet Hybrid Corn, cut off the cob 1 peeled Cucumber, diced 1/4 of a large Vidalia Onion, chopped 1 medium Tomato, diced Salt and Pepper to taste 2 Tablespoons Fat Free Italian Dressing
Combine all ingredients and toss. This summer salad is so yummy! I failed to take a picture of the finished product, because I was stuffing my face. I guess if you added some shrimp, it would be fantastic and protein packed.
By the way, the featured cucumbers were grown by my husband's friend and our neighbor, Roger. They were so appreciated.
